I don't really understand this.. I know that the Celica uses 5 bolt rims but what is this offset and everything and what does the Celica need?
18x7.5 5 x 100 45mm offset
So what does the 5 x 100 represent and then the 45mm?
Also is all of this information the same for GT and GT-S models?

5x100 refers to the bolt pattern. 5 bolts, each 100mm.
all rims must be 5x100 in order to be used on our car.
45mm is the offset. stock celica offset is 39mm. i believe since the new offset is 45mm, the wheel/tire would be closer in towards the car. not sure though.

Thanks Pete... just 'cause I want to put a WTB: out on a bunch of boards for the rims I want and want to know what information I should include.

5.100 refers to as pete said, 5 bolts...if you connect the bolts (that makes a star shape) the diagonal distance between 2 bolts is exactly 100mm. This is critical for fitmment..you shouldn't have anything else...
the offset is the distance of the hub center line to the center of the point of attachment to the car (where the wheel sits).
A negative offset is how far "in" the tire sits...postive offset if how far out the rim sits...minor variances in offset aren't terribly signifigant..but the car was engineered with a specific offset to allow for proper manouvering...
here's an excellent primer and reference:

It's worth a very careful read...you'll know exactly what your dealing with...and it's graphical...so it's easier to understand than most...in colour too!
